INGREDIENTS 

200g baby spinach

100g soft goat cheese

80g pecans

2 large ripe organic pears

 

LEMON DRESSING

4 tablespoons extra virgin olive oil

1 small organic lemon (washed)

1 teaspoon good quality honey (or 15g of ground erythritol)

a pinch of sea salt

 

PREPARATION 

  1. Wash and zest the lemon, then cut it in half widthwise and squeeze well. Strain the juice and place it in a small mixing bowl along with the rind. Add all the other dressing ingredients and mix well with a hand whisk.
  1. Wash the spinach and pear and dry them well. Cut the cheese into slices, deseed the pears and cut them into smaller pieces.
  1. Divide the spinach evenly on four plates, put the cheese on the spinach and place the pears and pecans on top. Pour the dressing evenly over the salads or divide it into four smaller cups and serve alongside with the salads.

 

NOTES

– For a more nutritious salad, you can add another pear.
