INGREDIENTS

240g fine rice flour

3 level tablespoons ground Ceylon cinnamon

2 level tablespoons ground ginger

2 level teaspoons baking powder

1 level teaspoon xanthan gum

a pinch of sea salt

120g melted butter

1 large egg

180g good quality honey

100g dark raisins

 

PREPARATION 

  1. In a mixing bowl, mix together all the dry ingredients and raisins. In another bowl, mix the butter, honey and egg with a hand mixer.
  1. Pour the liquid mixture into the dry mixture. Stir well and knead slightly sticky dough into a ball. Divide it in half and place each part on a baking tray with baking paper. Shape both parts into flat logs measuring approx. 35x10cm each. Place the tray with the mixture in the refrigerator for 20 minutes and preheat the oven to 170°C. After cooling, place the tray in the oven and bake for 15-17 minutes.
  1. After baking, take the tray out of the oven and take the baking paper with the baked mass out of the tray. When the baked mass has cooled completely, turn it around, remove the paper, cut each part into 20 bars and serve.

 

NOTES

– For a lower sugar content, you can replace raisins with chopped pecans.
