INGREDIENTS 

40g extra virgin coconut oil

1 medium white or yellow onion

600g carrots

1 large apple (golden delicious)

5 dcl vegetable (or chicken) broth

5 dcl of water

sea salt, freshly ground black pepper

1 level tablespoon curry spice mixture

3 dcl coconut milk (at least 60%)

sesame seeds

 

PREPARATION 

  1. Peel and mince the onion. Wash, peel, remove the green part from the carrots and slice them. Wash, peel, deseed and dice the apple. In a large pot, combine 1/3 of oil, onion and a pinch of salt. Cook until the onion becomes translucent.
  1. Add the remaining oil, carrots, apple and cook a little longer. Add the broth, water, salt, pepper, curry and coconut milk. Bring to a boil, lower the temperature and simmer for another 20 minutes in a covered pot.
  1. After cooking, set the pot aside and mix the soup with an immersion blender. Try it and season again if necessary. Pour the soup into bowls and sprinkle sesame seeds on top of each bowl.

 

NOTES

– You can add 400g diced chicken breasts to the pot after mixing (and cook it 15 minutes longer) for a more nutritious version of the soup.
