INGREDIENTS 

60g fresh basil leaves (washed)

2 level teaspoons coarsely ground garlic

50g unroasted cashews

75ml extra virgin olive oil

25g finely grated fresh parmesan

sea salt

 

PREPARATION 

  1. Put basil and nuts in a small food processor and mix well. Then add the garlic and parmesan and mix again. Add the olive oil and mix again. Finally, add salt and pepper to taste and mix one last time. Place the pesto in a sealed container and place it in the refrigerator.

 

NOTES

– For a more traditional version replace cashew nuts with pine nuts and parmesan with pecorino cheese.
